The single biggest challenge for any small business owner is cash flow, cash flow, cash flow. The biggest challenge, as a restaurateur in a recession, is still the cash flow. You want to fuel the appropriate arms of your business, and obviously with what we're going through right now — the credit crunch and everything else — you may have some wonderful opportunities for growth. But things are tight, as far as the credit markets are concerned. So finding and utilizing the cash in the appropriate places is really the toughest part — to be able to fuel the product growth that you need to exploit the different opportunities that come across.
